Vinification: The harvest is done mechanically in the second ten days of September during the early hours of the morning. After being pressed, the grapes undergo a red vinification, with a long but non-invasive maceration at a controlled temperature for about 15 days. The process is completed with 6 months of maturation in French oak barriques and 3 months of bottle aging.
Serving temperature: 16°-18° C.
Alcohol content: 13.5% % vol.
Monte dei Cocci Susumaniello is a refined and authentic expression of the native Apulian grape variety, cultivated with passion by Tenute Girolamo. The vinification takes place with maceration at a controlled temperature for 15 days, followed by a 6-month refinement in French oak barriques, which enriches the aromatic profile of the wine with spicy hints.
